Trachanas is warm, soothing and incredibly fast and simple. We enjoy it plain or with plenty of trimmed feta.
Heat the olive oil in a saucepan over high heat and sauté the onions for 2-3 minutes, until soft. Add the garlic and the trachana and continue the sautéing for 1 minute, stirring, so that they are well oiled. Add the tomato, water and salt. When it boils, stir, lower the heat and simmer for 10-15 minutes or until the soup boils. Sprinkle the oregano and, if desired, serve with crushed feta.
