- 1 medium chicken, about 1½ kilos (cut into portions)
- 1/4 cup olive oil
- 1 dried onion, chopped
- 1 clove garlic, crushed
- 1 bay leaf
- 3-4 allspice pods
- 1 tbsp full of tomato paste
- 2 packages chopped (2×400 g) or 880 g grated fresh tomatoes
- salt
- pepper
- 500 g feather pasta
- grated cheese for serving
Procedure
For the chicken with bacon in the oven, first cook the chicken.
Dry the chicken pieces very well.
Heat a large saucepan and add the olive oil.
Sauté the chicken pieces until golden brown on all sides for 5-6 minutes, in two batches, so that the temperature of the oil does not drop.
Remove them to a platter and keep them warm.
In the same oil, add the onion and crushed garlic. Sauté for 4-5 minutes until the onion softens.
Add the paste and rub it into the base of the pot for 1 minute.
Add the grated tomatoes and spices.
Add 1-1/2 liters of hot water and boil the chicken for 35 minutes until tender. If the chicken is free-range, it will take longer to soften, while if it is commercial, it will be done faster.
Preheat the oven to 230ºC on the top and bottom heaters, we will bake on the bottom rack.
Place the chicken with its ample juices in a deep baking pan or casserole dish.
We put it in the strong oven and let it burn well.
Once the pan begins to boil, carefully add the buttermilk and stir.
We check the salt and pepper.
We turn off the oven and do not open or close the door to maintain the warm temperature.
We leave the food in the turned off oven for 20 minutes to allow the patties to soak up the chicken sauce.
Serve it while it is still hot and juicy.
Secrets for the most delicious chicken with feather in the oven
-Boil the chicken in plenty of broth in a covered pot, always over medium heat, so as not to lose its juices. When it goes into the pan, it should be soft and cooked.
-When we put thefetaher in the pan, the chicken sauce should be enough to cover them by about 3 cm.
-If the sauce has evaporated during boiling, you must add boiling water, enough to cover them completely.
-Do not use a large baking pan because you will need more liquid.
-When you take the chicken with the feather out of the oven, pour 3-4 ice cubes on it and stir lightly until they melt.
-A few (2-3) pieces of butter on the surface of the pan while the food is baking will enhance its flavor.
-Instead of water, you can add hot chicken broth for a unique flavor.
-Serve immediately while the food is still hot and juicy because it dries out the longer it sits.
Serve with grated cheese of your choice.
